Oat Fudge Slice

OAT FUDGE SLICE
preheat oven to 180C or 360F
grease 8" round pan.
this recipe can be doubled with no problems.
just gotta adjust the baking time.
Into one bowl...
1 Cup Rolled Oats
1-1/2 cups boiling water
let this stand to absorb the water.
then add
1/3 cup of Butter or Margarine
let this melt into the hot oats.
then beat in...
2 Eggs
1 tsp Vanilla
In another bowl (while the above is going on).....
1 cup Flour
1 cup Sugar
1 tsp Baking Soda
1/4 cup of Cocoa Powder
mix well.
Add wet to dry ingredients, mix really well,
This will be a rather gloopy mixture, not to worry, it tastes reallllllllly good.
Pour into a greased 8"round cake pan.
Bake for 35 mins at 180C or 360F
(fan forced ovens will take less time, dont ask me how much less, i dont own one).
Let it cool completely, then ice/frost with....
Chocolate Icing/Frosting
3/4 cup Icing (powdered, confectioners) Sugar
1 TBL Butter or Margarine
1 TBL Cocoa Powder
add Hot Water (only a wee amount) to make a nice spreading consistency.
enjoy!!!!!
I sometimes put chopped nuts or half walnuts on top too, if i have any.
This should be quite moist when eaten.
nice with whipped cream, yogurt, ice cream, creme fraiche etc on top or nothing at all.
we've even eaten it without any icing on it. no one ever complained.

That sounds like the Minute Cookies I make at Christmas. They're oatmeal, peanut butter, cocoa, sugar, butter, vanilla and milk. You cook it on the stove top and drop them on parchment paper to cool. I have to get them out of my house as quickly as possible because they're addictive!

I am wanting to make some whoopie pies with a peanut butter filling. Can anyone tell me what you mix together so that the peanut butter will be spreadable and taste good. The cake part will be chocolate.
