Default Zucchini Hot Dish

New to me, made it yesterday. DH says we can make it again.

1 medium zucchini, unpeeled.
1.25 cups uncooked brown rice - rinsed
Fresh sliced tomatoes
Oregano (I used Italian Seasoning)
Onion- slice thinly
Green pepper - coarse chunks
American or Colby Jack cheese slices
Uncooked bacon

I used 10 or 11” round baking dish. Spray pan and fill with 3/4” sliced zucchini or chunks. Sprinkle on rice, layer of tomatoes, sprinkle generously with Oregano. Salt & pepper to taste. Layer of onion, green pepper and cheese slices. Lay bacon on top. I had enough bacon to cover completely and I cut each strip into 3 pieces. Season again. Cover and bake 350 for 90 minutes. There will be enough moisture to cook rice. Warmed up good today.

Zucchini and Onions
This is enough for two people.
This is not a precise recipe. You can vary and/or change any element and have a tasty dish.

1 Tbs oil
1/2 Med. onion finely diced
1 Med Zucchini sliced 3/8" thick, or 1/4" and cut in half
1 Tbs butter
Garlic powder as much as you want
1 Tbs Fine plain bread crumbs or panko
1/4 cup grated cheese...I use cheddar but any kind will do

Put the oil in a frying pan.

Add the diced onion and cook until starting to brown.

Add the zucchini to the pan. Toss every few minutes until the zucchini is cooked. My stove top is a glass one and it
gets very hot. So, I toss my every 2 minutes.

When the zucchini cooked and the onions are brown, add the butter and toss so everything gets coated in butter. Cook for 1 minute then sprinkle the bread crumbs and sprinkle the garlic powder over the top and toss to mix.

Sprinkle the cheese on top, toss to mix. When the cheese starts to melt, toss every minute until everything starts to "stick"together. I like my cheese to start to be crumbly but just cook as much as you want. At this point, I take my pan off the heat and set aside. The pan will keep it warm enough while I finish doing dinner.

If you are on a low salt diet, you can omit the cheese and be sure to use bread crumbs that do not have salt add
