My suggestion is that you check in at Hawthorne Supply Co. They have lots of modern quilt patterns available.

Search up "NY beauty" blocks. It's all paper pieced but looks amazing when the spikes are different rainbow colors.

I have similar fabric to yours and I’m planning a jewel box quilt, especially because the black fabric makes those beautiful colors pop!
You say you can get a lot more of the gray fabric would you mind sharing where? I love fabric that has words on it. Can’t wait to see what you wind up making.
