Baked Chickpea Patties
I've been trying to find an easy alternative to beef, or Beyond Beef patties for our hamburgers. I came across this recipe for baked chickpea patties. I'm gong to try them tomorrow to see how they taste. I imagine that they're something like falafels. I like that these aren't fried, but baked instead.

I am going to be curious if they stay together without an egg. Looking forward to hearing how you ladies felt about the recipe. I do want to include more beans in my life too.

I made them to go with our eggs yesterday morning. They were good! Nice alternative to toast, or breakfast meats.

They held together pretty well. The flour was a good binder on its own, but you could also add an egg, or use flax seed meal (freshly ground) or even easier, chia seeds. Mix the seeds with a little water first and let the mixture stand for about 10 minutes, until it thickens, before adding to the chickpea mixture. Flax seeds and chia seeds are both very healthy and full of nutrients.

I made them over the weekend are really liked them. Easy to make too. I made them quite thin so will make them a litter thicker next time. They would work well like Mkotch described. Will definitely make them again!
