If you go to http://www.quiltuniversity.com
Click on Class Catalog then scroll about 1/2 way down the page to Computer Aided Quilt Design
The last entry is for EQ7 sampler:
EQ7 Sampler. [January 7] Fran Gonzalez. Learn the fundamentals of EQ7 software. Skill level: Beginner. (4) $36
I have taken her EQ6 classes, Beginner, Intermediate & Advanced. They are great classes--do the lessons in the privacy of your own home at your own speed.

I use my EQ6 (now upgraded to EQ7) all of the time. The EQ6 classes will also help you using the EQ7, but I believe there will be an EQ7 full series of classes coming up.

Hope this info helps you,
Judy

Here is one post on that topic from here on the board : http://www.quiltingboard.com/t-77830-1.htm

Also it maybe easier to get the help you need if you ask specific questions

Have you tried the lessons that come with the book and software ?

Use the tutorials that are included with the program, both online and in the book. Also the help function in the program is very good.
