Recently had the best cake ever but the baker refuses to budge on sharing the recipe or name of cake.

The cakes was 3 layers and a pale yellow extremely moist cake and it was frosted with a pale yellow frosting with pineapple chunks. The icing did not have the consistency of a buttercream and did not taste as if it had cream cheese but could have had it not much. Anyone have any ideas?

maybe she wont budge because she purchased tha cake from a bakery ?????

sounds delicious, might be cakes that comes in already made frozen and they just defrost

I think it's silly anyone would not share a recipe unless it's for business reasons. The frosting was probably made using butter and Crisco shortening in equal amounts. That is what most bakeries use if not all Crisco. It's very light and fluffy. So easy to make too. Combine room temp real butter with equal amounts of Crisco solid shortening. Beat in powdered sugar until the firmness and sweetness taste you like. You can add any flavors like vanilla, hazelnet, almond just be sure they are NOT artificial flavors, it has to be the extract in an uncooked dish. I took a cake decorating class years ago and this was the basic butter cream frosting, decorating recipe. Use all butter for real butter cream but it won't be as fluffy or light. You can add cream cheese, fruit, nuts, or toppings to any of the two. Adding an extra egg white to the regular eggs in the batter recipe will make the cake very light textured.

Could it be humming bird cake? Maybe done with a cooked red velvet cake frosting?

Source: Southern Living

3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups sugar
1 teaspoon ground cinnamon
3 large eggs, beaten
1 cup vegetable oil
1 1/2 teaspoons vanilla extract
1 (8 ounce) can crushed pineapple, undrained
1 cup chopped pecans
2 cups chopped bananas
Cream Cheese Frosting
1/2 cup chopped pecans

Combine first 5 ingredients in a large bowl; add eggs and oil, stirring until dry ingredients are moistened (do not beat). Stir in vanilla extract, pineapple, the 1 cup pecans and bananas. Pour batter into three greased and floured 9-inch round cake pans.

Bake at 350 degrees F for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes; remove from pans, and cool completely on wire racks.

Spread Cream Cheese Frosting between layers and on top and sides of cake; sprinkle 1/2 cup chopped pecans on top. Store in refrigerator.

Cream Cheese Frosting:
1 (8 ounce) package cream cheese, softened
1/2 cup butter or margarine, softened
1 (16 ounce) package confectioners' sugar, sifted
1 teaspoon vanilla extract

Beat cream cheese and butter at medium speed with an electric mixer until smooth. Gradually add confectioners' sugar, beating at low speed until light and fluffy. Stir in vanilla extract.

Red Velvet cake frosting

5 tablespoons flour
1 cup milk
1 cup margarine
1 cup sugar
1 teaspoon vanilla extract

Cook flour and milk until thick. Stir constantly. Cool COMPLETELY in refrigerator with a lid on the pot. Then carefully remove the lid and pour off all the moisture that accumulates on the top of the lid and set aside.

Cream margarine and sugar well. Add vanilla extract; beat. Add flour and milk mixture. Beat until right consistency to spread. Will get really fluffy.

The frosting sounds like one I make all the time and it's so easy. Take one sm package of instant vanilla pudding and add 1 can (15oz) crushed pineapple juice and all stir till well combined then add 1 to 1 1/2 cups cool whip frost cake and refridgerate. Hubby loves this on any cake as it's not as sweet as regular frosting. Hope you like this. LuAnn
