I have a lot of 2 inch strips of random lengths. I think I could use the same technique and just modify the size with borders. Do you think that will work?

Yes. Just measure the strips lengthwise as you go and have them add up to 1600 inches. With 2inch strips, it will end up approx. 48 X 50. Good size for a baby quilt.
I've made several of these scrap quilts and called them my "trip down memory lane" quilts since I'm used fabrics from so many past quilting projects.
Good luck!

Yes, I done one with 1 1/2 " strips of various lengths.
When I got tired of sewing the strips end-to-end, I started sewing it into rows, then just put a border to get my desired size.

I love it. I've been wishing for something fast for a charity quilt. Great idea. Found this site this morning and am glad I did! I'll be back.
