Am I on the right track?

Am I on the right track?
Ask to restore this hand pieced Turkey & Giblet quilt. Am thinking to quilt with filament, ie clear thread as not to compete with the design of the quilt. Considering stitch in the ditch, but the piecing lines are so uneven that it will take way to long. Am I on the right track? Any comment is greatly appreciated.

Is it an unquilted top? And you want to machine quilt it? If so, I would definitely not do stitch in the ditch; it would be a nightmare because of the uneven piecing, and SITD would draw attention to the uneven piecing. I would maybe quilt concentric circles around the pieced circles, fill in the circles with a flower design, and finish the other unquilted areas (open areas left after quilting the concentric circles) with a geometric design. I think this would enhance the design. Monofilament thread would be a good choice for machine quilting. If you are thinking of hand quilting, monofilament would not be a good choice.

I would suggest keeping in line with the traditional look of the quilt top, and do a cross-hatch pattern. Yes, it might call attention to the mismatched points, but a traditional block (especially if the top is vintage) calls for a more traditional look. And I wouldnt introduce monofilament thread into this quilt top. Natural cotton would be my choice. Good luck!
