I tried binding for the first time last night, and unfortunately, my fabric was too narrow.
2" instead of 2.5". So, I can't fold over to sew on the other side. That was the first of my few mistakes. I also started on the back side instead of the front, and I sewed my pocket shut so I had a hard time inserting the tail into it to sew that all together nice and snug. Lessons learned!!

My question is, what are my options at this point?

It is only a practice rectangle. I was going to try to turn it into some kind of apron skirt and I'm not too concerned with it being "perfect".

Should I take the time to take it off and have another go at it??? Or is there something else I can sew on to "finish" it off just so I can be done and move on to my next practice item (which is a quilted placemat).

I always make my binding 2 inches. If you just took a 1/4" seam, you should be able to fold over. It's ok to sew it on the back instead of the front. In fact this is the preferred method if you are going to sew the binding down by machine rather than by hand.

If it's mainly for practice, why not just cut it off? An easy way would be if you have a serger that could cut and secure the edge at the same time. Then just find some more fabric that is wider. If it was me and I was sewing to the back to fold over to the front, I would use 3" wide that way I could use a pretty decorative stitch and it would hopefully miss stitching on the binding on the backside. Helps also if you have a busy print on the backing fabric.

Have you watched any of the binding videos for making a mitered corner? Lots of them on you tube and also some good ones at Missouri Star Quilt Company.

well you could remove it and add another strip to it, making it a two color binding. something like this http://scrapsbystephanie.blogspot.co...-tutorial.html

​You can also check out Charisma's Quick Machine Binding with flange in the QB tutorial section. It makes a neat machine finish and also is great help for when you don't have quite enough fabric to cut 2.5 out of just one colour fabric.

Or just cut down our seam allowance giving you enough room to fold over your thinner binding and sewing down to front either by machine or hand?

I was thinking about inserting a flange. and don't worry about putting it on the back first. lots of quilters do that and bring it over to the front. no worries.
