Default Binding mistake

I tried binding for the first time last night, and unfortunately, my fabric was too narrow.
2" instead of 2.5". So, I can't fold over to sew on the other side. That was the first of my few mistakes. I also started on the back side instead of the front, and I sewed my pocket shut so I had a hard time inserting the tail into it to sew that all together nice and snug. Lessons learned!!

My question is, what are my options at this point?

It is only a practice rectangle. I was going to try to turn it into some kind of apron skirt and I'm not too concerned with it being "perfect".

Should I take the time to take it off and have another go at it??? Or is there something else I can sew on to "finish" it off just so I can be done and move on to my next practice item (which is a quilted placemat).
