Over the years I have made quilts from large down to doll quilts and there is always bias/binding left over. Since it stretches so badly, is there some way to use up this excess???!!

I am saving mine and will combine them on a scrappy quilt binding.

You could iron tje stro[s flat and use them to make string blocks. There have been some threads lately about using coffee filters for this. When you use either a foundation fabric or paper base, it doesn't matter if the fabrics are stretchy.

Also, heavily starching the bias strips will help keep them from stretching. Still, I would probably use them only for string blocks.
