I also have made scrappy jelly roll races. I've had left over children prints and novelty items, sorted into boys and girls themes, they were so cute together. hearts went on the girl quilts and boy items on the others. they were fun and a way to use up strips that were useless to me otherwise.

That's the prettiest jelly roll quilt I've ever seen!

That is the only way that I've done it with scraps. Haven't finished this one yet, but am using an old pannel that you would make a stuffie with. Plan to applique the bunny on the front and the back end of the bunny on the back of the quilt.

When I finished and quilt was a bit too long, I removed the extra rows and cut them for the border.

I love the jelly rolls with appliques. One of my plans is to make simple quilts and make velcro animals to add all over them, plus extra velcro dots so the objects can be moved around. I could see that Christmas quilt with velcro Santa and reindeer, or the Easter bunny with velcro animals.

I think jellyroll with your own fabrics would be great, the more random the better.

I must add further support for the jelly roll with applique quilt. Though in general, I find adding scrappy pieces helps add much-needed randomness to a jelly roll race.

I think you can. The only problem would be mixing Civil war fabrics with bright batiks.
