How about an I-Spy type quilt only make the blocks bigger and use a theme (princesses, kittens, puppies, polka dots). The polka dots would be fun and probably not as juvenile-themed as character or animal prints. The quick quilts I made for my 3-yr old granddaughter usually ended up going to preschool and kindergarten as nap quilts, then back home as couch quilts for them.

Either the 9-patch or the 4-patch are great for being quick, and give a wonderful look. Our Guild has a lot of either of those made for our Community Quilts.
Good luck!

I call this pattern "Four Patch Surrounded".

That Four-Patch Surrounded looks like just the ticket! And I think you could still make it an I spy quilt!

Hugs and Kisses is a fun one too.
