I tried the "10 minute block" and although I did like the way they looked, thought it was a waste of fabric as well.

I think it is a great idea fir beginning quilters. They can make a quilt that looks difficult and gain some self confidence in becoming a great quilter.
Then again you need to decide if you'd rather "waste" a little fabric or waste your time cutting out multiple pieces just to sew them together to get the same result.
