It sounds like people that are the same height find different heights of cutting tables comfortable.
I'm 5'6" and have a door on top of a set of kitchen base cabinets bought at Habitat for Humanity.

5'2" on a generous day, 35" top. I'm all legs however. Lowest rib is 3/4" from the top of my pelvis.

I'm 5'6 and my cutting table is 37 1/2" and it is just right for me. I don't have to bend over and end up with a very sore back. Hope you can find just the right size for you.
