Due to the recent shortage of Cocoa beans, reported to be sky-rocketing in price very soon, thought you might enjoy this recipe:

Fudge For One

Ingredients

1/3 cup sugar
1 heaping Tablespoon cocoa
1 Tablespoon plus 2 teaspoons milk
1 scant Tablespoon butter or magarine
1/2 tsp. vanilla

How to make it

Mix in 1 qt. glass measuring cup: sugar, cocoa, and milk.
Microwave for 1 minute.
Stir.
Microwave for 40 seconds.
Add butter and vanilla.
Beat until thick.

And in case you haven't tried this one, it's really good!

Chocolate Mug Cake for One (or two)

coffee mug
4 tablespoons flour - make sure to measure exactly
4 tablespoons sugar
2 tablespoons unsweetened cocoa
2 tablespoons whisked egg - 1 egg is too much, 1 egg white is too eggy, 1 yolk is too dense, but 2 tblsp is just right!
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips - You can leave these out, but they make a great gooey topping if you turn the cake out into a plate
splash vanilla or other flavoring - try peppermint or cinnamon
For a fudgier version, omit egg!

Add all of the dry ingredients to the mug and mix.
Add the egg and combine well. It gets pretty pasty at the point.
Stir in milk and oil.
Add chocolate chips* and splash of vanilla. Stir well.
*if you don't have chocolate chips, try a broken up candy bar - I can't stress how much this amps the awesomeness of your cake

Microwave for 3 minutes in a 1000w oven, or 4 minutes in a 700w oven. NOTE: I do this in 1 minute increments. As soon as you see the cake puff up over the cup, turn off the microwave & let it set for a second or two. Just experiment with it & you’ll get it.
It will start to crown over the top of the mug. Don't panic! It will collapse once the heat stops.

These are neat recipes to have. My hubby and I are always on a diet, with something like this, you'd only be making enough to kill the urge to cheat. Thank you.

Yep, you don't even want to think about the calories! I don't know about the fudge, but the cake is somewhere in the range of 900+ calories. Even if you don't want to it might be wise to share this one.

I make the cake out to be around 600-700 calories. Just a small snack ;-)

My grand daughters love making themselves the mug cakes. Watching the "raise" while cooking is a hoot.
