Recipe Idea??
 
My DH and I will be attending a Newcomers Club Open House tomorrow. We each take a dish to share, and I'm trying to think up something to take....ideas?

My favorite go to dip is: Salsa

You will need 8 oz cream cheese , soft
Large jar of your favorite Salso......I like Herdez and it comes in a nice size jar
Frito corn chips, I like the scoops

Mix a couple TBSPs of salsa in the softened cream cheese and stir till smooth. Spread in a plate or shallow bowl, something with a lip on the side to keep it from spilling; then pour remaining Salsa on top to cover it all. Serve with scoops......your bowl will be empty in a few mins.

You may also substitute chutney for the salsa and it is still sooooo good.

You'll get plenty of compliments on this recipe, if you don't mind doing a little chopping.

CRANBERRY SALAD
From Renee Winter, 2011

This recipe is delicious: sweet, tart and crunchy. If you use green and red apples like, granny smith, golden delicious, braeburn, Fuji, pink lady or any other crunchy apple, it makes a beautifully colored salad.

INGREDIENTS:

1 bag of fresh Cranberries – chopped
3-4 crisp apples – diced (leave the skin on)
½ Cup Sugar
1 Large package of regular raspberry, strawberry or cherry Jello
½-1 Cup chopped nuts

DIRECTIONS:

Place chopped cranberries, apples and nuts in bowl and mix together.

In small bowl, mix sugar and Jello together.

Boil some water and mix just enough (maybe 1/3 to 1/2 cup) to dilute the Jello/sugar mixture.

Add to mixture and toss well.

Refrigerate for at least an hour and serve.

With the cranberries and the different colored apples, it makes a great presentation.

EASY FROG EYE SALAD

· Serves 8
Ingredients:
· 8 ounces acini di pepe pasta, uncooked (small pasta that looks like rice)
· 1 (20 ounce) can pineapple chunks, drained (reserve 1/4 c
· juice.
· 1 3/4 cups milk
· 1/4 cup sugar
· 1 (3 1/2 ounce) package instant vanilla pudding
· 1 (8 ounce) can crushed pineapple, drained
· 2 (11 ounce) cans mandarin oranges, drained
· 2 cups Cool Whip
· 3 cups miniature marshmallows
· 1/2 cup coconut (optional)
Directions:
1.
Cook pasta in boiling water 11 minutes; drain and rinse with cold water.
In large bowl, beat reserved pineapple juice, milk, sugar and pudding
for 2 minutes.

Gently stir in pasta, and remaining ingredients.
Cover and chill at least 2 hours.

Thanks for all the recipe ideas. I've decided to make a Rice and Corn Casserole. I have all the ingredients on hand. I've never made it before, so this will be an opportunity to try it out without us having to eat it all....lol

You are right, I did put it on several threads. It is such a great recipe that I wanted to give it a lot of exposure. I hope I didn't break any rules by doing that.

I would love to try this but not sure what jello is. Being from UK is that what we would call jelly it is like squares of jelly to melt down with boiling water and can leave to set or can be bought in crystal form. Some of your recipes sound delicious but all ingredients are not named same as ours and sometimes I'm scared to try them.

Newjeepgreen, I believe it's called jelly in the UK. It's usually in powdered form in a small box, several flavors.
