"Mock" Strawberry Preserves

We have fig trees at my mom's and dad always made this recipe. Everyone swore it was strawberries but in fact figs have the same texture. Hope you try it.
2 qt. sliced figs
6 cups sugar
2 (3oz) pkg strawberry flavored gelatin
1 (1-3/4 oz) powdered fruit pectin.
Combine the first three ingredients in a large saucepan and let stand until syrup forms. Bring to a boil over a full flame. Continue boiling 20 minutes. Add the fruit pectin. Continue boiling 2 minutes. Pour into sterilized jars. Seal immediately.

I had a recipe, once, from my MIL from her MIL for green tomato jam. It sort of followed this recipe, you cut up/cooked green tomatoes and added jello - I lost the recipe. This was a really good recipe for end of season gardens to use up green tomatoes before a killing frost. this yr, it seems the drought will kill everything first sharet

ok, here is a recipe for green tomato jam, not my MILs but it sounds close. you can sub any jello. sharet
green tomato jam
Ingredients
2-1/2 cups pureed green tomatoes (about 3 medium)
2 cups sugar
1 package (3 ounces) raspberry gelatin
Directions
In a large saucepan, bring tomatoes and sugar to a boil. Reduce heat; simmer, uncovered, for 20 minutes. Remove from the heat; stir in gelatin until dissolved. Skim off any foam. Pour into jars or freezer containers, leaving 1/2-in. head space. Cool before covering with lids. Refrigerate. Yield: about 3 cups.

I made this one time and loved it, my hubby had a fit!!
He said: Karyn you can buy strawberry preserves anywhere, rarely do you see fig preserves that you can buy. I haven't made them since. I thought they were great.
