Becky's Scotch Fruit Bars
1 1/4 cups flour
1 cup rolled oats
3/4 cup brown sugar
1/2 teaspoon salt
1/2 cup shortening
1 1/2 cups mince meat
Mix all the ingredients EXCEPT the mince meat. When mixture resembles course crumbs, pat half of it into an 8 x 8 square pan. Add the mince meat layer, and then top with the other half of the crumb mixture. Bake 25 minutes in a 350' oven. Cool half an hour, and then cut into squares or (if you desire) longer bars.
I grew up with these and they are terrific!

Sounds like a great recipe, however, can you make a suggestion of what to replace the mincemeat with? My mom used to make mincemeat cookies when I was a kid and Uhg! Not my favorite. Maybe a type of jam??

This recipe is similar to date squares. I've also used pumpkin butter and apple butter instead of dates. I could see this working with lemon curd as well. Jams might work but you need them to be on the thick side otherwise it would tend to run. PS I love mincemeat and think it would taste great.
