THank you, I was thinking the same thing. 7 cups of flour is a lot. I will try that too.

I prepared remaining dough for future frying by layering them on parchment paper in plastic container, and then stored in freezer. They are all ready for my next craving of beignets in a couple of weeks from now.

Oh I want to try these, but will have to wait for a time I am having company, with just three of us even half a recipe would be too much, not that we couldn't eat a dozen of these each!
