Default Blueberry Zucchini Cake - Yum

This is not my recipe, so I am posting a link to the blog where I found it, instead of writing it down here.

I made this cake on Friday and it is an incredibly moist, easy to make cake. I am not a fan of icing, so I just put a lemon glaze on top.

If you have extra zucchini in your garden, this is a good way to use it up. I will try making it with blackberries next. I plan to make one with frozen blueberries for my next guild meeting.

The cake is dairy free, if that is an issue for you or a family member.

I made this recipe yesterday, it's delicious! Only changes I will make upon making this again is to eliminate the frosting. I love sweets but thought the sweetness of the frosting overtook the flavor of the cake. Next time I may sprinkle a tablespoon of sugar over the top of the cake just before baking. I also thought this would be great using this recipe as muffins. This is a recipe I plan to use many times again in the future.
