    Here is my recipe Becky...I love this.

    3 eggs
    1-1/2 c. veg. oil
    2 c sugar
    mix this tog.
    add:
    2 c grated carrots
    1 sm. can crushed pineapple
    1c. nuts
    3 tsp vanilla
    to this add:
    3 c flour
    1 tsp salt
    1tsp baking soda
    3 tab. cinnamon
    mix all tog in order. Bake at 350 for about 45 to 50 min. or until tooth pick comes out clean.

    7.Bake at 350* for 1 to 1 and 1/2 hours or until toothpick comes out clean when tested
    8.Split into layers and ice with cream cheese icing. Decorate the top and sides with chopped walnuts if desired

    Cream Cheese Icing

    8oz cream cheese at room temperature
    3-4 cups icing sugar
    2-3 tbsp. lemon juice
    1.Cream cheese and sugar alternately with the Lemon juice until fluffy
    2.Spread as filling and over tops and sides of cake

    with that crushed pineapple, do you drain the juice??

    I don't drain the pineapple juice. Just dump it in. A little more moisture won't hurt.

    This is my Mom's Recipe and I always get requests for it.

    Carrot Cake

    2 cups flour
    2 cups sugar
    1 tsp. salt
    2 tsp. soda
    2 tsp. cinnamon
    1 1/2 cup wesson oil
    4 eggs
    3 cups grated carrots (raw)

    Stir dry ingredients in large bowl. Add oil and blend by hand. Add eggs and beat;
    then add carrots. Mix thoroughly. Bake 4 to 50 min.

    Icing
    3 ounces cream cheese
    1/2 stick marg.
    1/2 pound powdered sugar
    1/2 tsp vanilla
    Cream together thoroughly with beater.

    Will be doing the carrot cake great recipes. I am allergic to oranges in any form, and in England there is a growing trend to put orange zest in carrot cakes. Great to see in US very sensible no orange. Hip hip hip.

    Here are my favorite receipes for carrot cake and cream cheese frosting - as always I'm lazy, no grating carrots for this woman.
    Desserts
    Carol's Carrot Cake
    Servings: 12
    Moist carrot cake - easy to make - don't need a mixer just a spoon- use cream cheese frosting on top
    1 cup Oil2 cups sugar3 each eggs2 jars junior baby food carrots (6oz each)1 cup crushed pineapple, drained1/2 cup coconut, shredded1/2 cup nuts, if desired2 cups flour1 teaspoon cinnamon1 teaspoon baking soda1 teaspoon salt

    In a large mixing bowl blend the oil, sugar, egggs and baby food carrots
    Your Text Here
    Now add the pineapple, coconut and nuts if you want them

    Sift together the flour, cinnamon, baking soda and salt. Then add this to the other ingredients.

    After mixing well, pour into greased and floured 9x13 baking dish or angel food pan.

    Bake at 350 degrees for about 1 hr.

    After cooling frost with cream cheese frosting.

    Cream Cheese Frosting
    Goes well on the Carols' Carrot Cake
    8 ounces Cream cheese1 stick margarine1 tablespoon vanilla1 pound powdered sugar

    Combine all ingredients, using a mixer. If necessary add a few drops of water till the right consistency. I generally do not
    need any water.
