That time of year when baking smells soooo goood.

Chocolate Caramel Pecan Pie


Melt together in microwave until smooth, cool slightly
36 caramels
¼ cup butter
¼ c. water
¾ cup sugar
1-cup chocolate chips
---------------------------------
Add that to this stuff and mix until smooth.
½ tsp. Vanilla
¼ tsp. Salt
3 eggs, beaten

1 cup pecans + some to make the top pretty


Pour over crust, arrange some nuts on top – this is a good-looking pie. Bake at 350 degrees for 40-45 minutes or until pastry is brown. Filling will appear soft and puffed up, but will settle down as it cools. Wait until cool to cut.

Crust
1 egg yolk
1 Tbl. White vinegar
2 cups flour
¾ cup Crisco shortening
1 Tbl. Sugar
½ teaspoon salt
Water as needed (can be bourbon if you’re out)

Combine egg yolks, vinegar and enough water to make 1/3 cup.
Cut shortening into dry mixture. Dribble liquid in until you make a ball. Chill before rolling out.

If time is short, I use frozen crust and it still turns out good. Hardest part is waiting for it to cool off.


You can leave out chips and it's more traditional

This is a definite one for me this week! My husband loves carmel, and pecan pie is his favorite. When we got married 4 years ago, I'd never made pecan pie in my life! So I'm anxious to please his pallate with a new variety that sounds heavenly! Thanx for sharing! Sara
