Chocolate Zucchini Cake

2 cups lightly pared grated zucchini, drained
2 cups flour
1 tsp. salt
1 1/2 tsp. baking soda
1/2 cup cocoa
2 eggs, well beaten
2 tsp. vanilla
1/2 cup vegetable oil
1 1/4 cup sugar

Bake in greased 13" x 9" cake pan at 350 degrees for 35-40 minutes.

It's moist. I put a dollop of cool whip on top as I don't like icing.

just cut the zucchini into chunks, pop it in the blender and puree or blend or whatever setting you have. It will be nice and smooth and pretty green. Let it sit a few minutes to allow the water to come to the top. Drain off the water, use the rest.

I cut out the seed area, makes it smoother and greener. Once the cake is mixed you don't see the green.
