I can't remember but in the last few days I think it was on this site where someone listed a Zuchinni bread made with a spice cake mix does anyone remember it? Can you direct me to the place or receipe? I have a friend coming to stay for a week and I wanted to make a very quick zuchinni bread without having to measure everything out like I usually do. PLEASE HELP ME PLEASE. If I have to cook too much then that leaves less time for sewing which is what we plan on doing this week. Any other quick fast receipes will be appreciated too but especially the zuchinni bread since I have two and don't want them to go to waste.

I will see if I can find that recipe, here you go

If you google "zucchini bread from cake mixes", you'll find lots of references. I found one for you which may fit the bill for you. It's from Recipe Gold Mine and you can find it and others at http://www.recipegoldmine.com/cakemi...ini-bread.html

Here's the recipe for Zucchini Bread:

1 (18.25 ounce) box spice cake mix
    3 eggs, beaten
2 cups grated zucchini (don't drain)

Mix all ingredients to moisten, then beat 3-4 minutes to blend well. If it seems a little dry, add 1/2 cup applesauce. Divide evenly in 2 greased loaf pans. Bake at 350 degrees F for 55-60 minutes until it tests done with a wooden pick.

NOTE: If you can't find spice cake mix, use yello cake mix and add 2 1/2 teaspoons apple pie spice mix.

Hope this works for you. Good luck!
