    I made these for supper tonight along with pork steak and peas. We had leftover mashed potatoes from last night meal.

    Crispy Potato Patties Recipe


    Prep Time: 15 minutes
    Cook Time: 8 minutes
    Total Time: 23 minutes
    Ingredients:
    2 cups mashed potatoes
    1 egg, beaten
    1 onion, minced (optional) I didn't use the onion
    1/4 tsp. salt
    1/8 tsp. white pepper
    2-3 Tbsp. olive oil
    1/2 cup flour
    Preparation:
    Mix together (I used a spatula and was easy to mix) mashed potatoes, beaten egg and onion in a medium bowl. Add salt and pepper and stir. Over medium heat, heat olive oil in a medium size nonstick frying pan. Drop about 1/4 cup of the potato mixture into the frying pan, patting it into 4 inch circles that are 1/2" thick. Cook until bottom is browned and crisp, about 3-4 minutes. Using a spatula (I sprayed the spatula with Pam Olive Oil) Carefully turn the patty over and cook the second side until brown and crisp, 3-4 minutes. Serve with ketchup or salsa

    My mom used to make those when we were growing up. Had forgotten about them. We called them potato cakes. Thanks.

    thanks. have bookmarked your blog........will add cooking. I have new computer and trying to find
    where all the keys are ........my harddrive crashed !
    Too bad they can't be fixed......(the computer) food can be fixed..

    I mixed the flour with all of the main ingredients

    (the flour keeps the potato cake from falling apart)

    My Mom used to make these with leftover mashed potatoes! And I used to love them. Haven't had them in years! Thanks for the nostalgia...took me right back to my childhood. We called them potato patties!

    Yum-yum - sounds delicious! Wouldn't they be good with some Copper River salmon?

    I don't see what to do with the flour. Do you add that to the potatoes also?

    My mom made those too and I always loved them. I may have to try some soon. I think she called them potato patties too. This was back in Texas.

    Yummy. My sis makes something similar but could never get my to turn out the same. I think I wasn't using the egg. Can't wait to try it.
