Peanut Butter Cookies
1 c. brown sugar
1/2 c. peanut butter
1/2 c. butter or margarine, softened
1 egg
1-1/4 c. flour
3/4 t. b. soda
1/2 t. b. powder
1/4 t. salt
1 c. peanut butter chips.
granulated sugar
heat oven to 375. Mix brown sugar, butter, PB, and egg. Add dry ingredients and chips.
shape dough into 1-1/2" balls. Dip top of balls in granulated sugar. place sugar side up on ungreased cookie sheet about 3 " apart. Bake 9 to 10 minutes until golden brown , cool 5 minutes before removing from cookie sheets.
Do not flatten tops or criss-cross with fork. these spread out and get those nice crackle tops. If you make the balls perfectly round these will look like professional bakery cookies. I leave out the chips and they are still awesome.

Even easier Peanut Butter cookies!!!
1 Cup of peanut butter
1 Cup of packed brown sugar
1 egg
Mix well, chill for 1 hour. Preheat the oven to 350.
sccop 1 1/2 inch balls onto ungreased cookie sheet. Cook until the edges get brown. Cool and gobble them with milk!

I am also known as the cookie lady in my neck of the woods :P I love to bake anything and everything when people come to visit I'm always sending them home with a bag of cookies. It is not your ordinary chocolate chip recipe. It really surprises people when they bite into them. They are from a bed and breakfast place that put them into a basket with a bottle of wine left in their customer's room for them at night. Called Sweet Dreams.
SWEET DREAM COOKIES
1 Cup Butter
1 ½ Cups Brown sugar
1 Large Egg
1 Teaspoon Vanilla
¼ Cup Sour cream
2 ½ Cups Flour
1 Teaspoon Baking soda
1 Teaspoon Cinnamon
1 Teaspoon Ginger
1 -2 Cups Chocolate chips
1 Cup Nuts (optional)
Cream butter using electric mixer.
Beat in brown sugar, egg, and vanilla.
Combine flour, baking soda, cinnamon, and ginger.
Blend into butter mixture.
Fold in chocolate chips and nuts.
Refrigerate for 1 day to give the flavors time to blend.
Preheat oven to 375.
Make 1 1/2" balls aprox. and roll in powdered sugar.
Place on baking sheet about 2 inches apart, they do spread some.
Bake aprox. 10 min. Under bake if anything, they turn out nicer if they are just barely brown on the edges.
Let cool and transfer to airtight container.
Note.
I most often just bake them after mixing them up and they still turn out very nice.
I use a medium sized scoop and just scoop and drop into the powdered sugar. Keeps my hands cleaner that way.

Everyone asks for the recipe for the chewy chocolate cookies - but they don't keep well. I freeze whatever we aren't going to use within the next hour or two. (They really do taste stale by the next day!) My kids always ate these right out of the freezer. The snickerdoodles are great, too.

My favorite are soft oatmeal with chocolate chips. Just use your favorite soft oatmeal cookie recipe & delete the raisins & add chocolate chips instead. Store in an air-tight tin or plastic container to keep soft. Yummy!!!!!
