I am looking for a pumpkin recipe, but not bread,cake or pie. A soup, or main course-type dish,something different. I am sure someone here has a recipe!!!

Here's a place for some neat ones...Naomi

Great Pumpkin Punch recipe
Scale ingredients to servings
1 pumpkin
1 part apple cider
2 parts ginger ale
1 part rum
Serve in a hollowed out pumpkin with floating pumpkin chunks.

go to Allrecipes and type in pumpkin, soup or main course??

Do you read Country Woman magazines? There are a lot of recipes for pumpkin use. Look on their website. If not I'll look through some of my mags for you.

Pam I do not get that mag. I have Googled pumpkin recipes and also Food Nyetwork and Epicurius..found some interesting ones. One with leeks sounded great but no leeks available at the store....

e water to a boil over high heat. Then reduce the heat to its lowest point, cover the pan and simmer for 1 hour, basting the squash every 10 minutes with the pan liquid. when the squash is tender but not mushy, turn off the heat and let the squash cool in the pan to room temperature. To serve, arrange the squash on a platter or in individual dessert bowls, and spoon over it a little of its cooking liquid—now a syrup. If you like, top each piece of squash with whipped cream.
I use pumpkin for this dish sometimes - of course, it is a sweet.

Thanks Merry, what a cool recipe! ANd Jitkaau, that sounds like a yummy dessert. I love pumpkin and squash.
