    I am looking for a good carrot salad with pineapple, ideally no raisens but a creamy sweet/tart sauce!

    I make a really simple shredded carrot salad with pineapple, but just kind of dump in stuff, so you will have to work out exact amounts. First I shred carrots in my food processor. It looks like about 2-3 cups for the two of us. Then I add fine minced sweet onion (maybe 1-2 tablespoons.) I drain a small can of chunk pineapple and add it, but I save the juice. I add a handful or two of raisins or craisins if I have them. For dressing I mix together mayo, several tablespoons of orange marmalade and then thin it with the pineapple juice or orange juice and some milk if it needs to be creamier. I mix in dressing an hour or so before we eat so it can meld together with carrots etc. Sometimes I add just a little salt if it needs it. I kind of do this by taste, so you will have to improvise.

    ooohhh the orange sounds like a fantastic idea! I am going to try that one thank so much you guys for sharing. I get stumped occassionally and that sounds great.

    My mom used to make carrot and pineapple salad with orange or lemon jello. Very simple, make the jello, let set till not all liquid and add carrots and chunky pineapple. This was a Sunday dinner mainstay for all my growing up years.

    You need to google Luby's Cafeteria's recipes...for their salad...it's delicious...they use powdered sugar...in theirs...

    Just wanted to say my gram used to make this for us all the time. For me it is comfort food. She just used mayo a little milk and sugar to taste. Maybe pineapple juice instead of milk.

    My favorite uses a large box of orange jello, about 2 - 3 cups of shredded carrots, a can of crushed pineapple in syrup and a cup of chopped toasted pecans. Make the jello with the boiling water per package directions. Pour into a bowl to set up and thicken. Do not add the cold water, but instead, use the pineapple and syrup. I put my can of pineapple in the freezer for about an hour before I begin. When the jello thickens a bit, add the carrots and nuts to the orange pineapple mixture. Chill thoroughly for 2 or more hours before serving. Makes a nice light and refreshing summer side salad.

    wow so many ways to make a carrot salad! who would have thought? I have to try one of these out on my guests tonight... they will love this I think as we are having a gourmet dinner of pizza lol and I want a couple salads for the side simplicity is the name of the game tonight and this foots the bill totally. thanks ladies!
