Here's one I got off the Minute Rice box years ago. Have tweaked it to suit our likes over the years.
In a skillet with a couple tablespoons of oil (your choice) saute about a half cup thinly sliced onions (and diced garlic if you like) and 1 to 1 1/2 cup of minute rice. Add 1 can of stewed tomatoes (broken up into small pieces), about a half cup of water or a can of tomato sauce depending on how strong you like the tomato flavor and salt and pepper to taste. If you like some zip add a tablespoon or two of salsa or picante sauce. Bring to a boil,cover and lower heat to simmer for 5 minutes or until the rice is soft. Stir well and serve. If you prefer you can substitute a couple of cans of tomato sauce and extra water for the tomatoes. You can also add chili power, cumin or any other spice to your taste.

Thanks everyone. Haven't had this for years and years. Will go through all of the suggestions and hopefully make some. My mom used to make this for us when we were kids. I LOVED it. My husband hates rice, oh well:):( Looks like I'll be eating leftovers:) YUMMY

do not stir your rice while it is cooking u will have mush
also do not put tomm much water cover the rice w/ water
you can always add but not take out
cover you pan w/ a lid while cooking for added steam
garlic and cumin to your taste
cumin is very strong a little goes a long way
after it is ready turn off the stove and let rest for a few minutes
do not dig in right of way

I grew up eatting mexican rice and love to add chicken to make it a meal
