I got this recipe, in the cookbook from my Secret Pal--Dream56

1 3/4 c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. nutmeg
1 1/4 tsp cinnamon, divided
1/3 c. oil
1 1/2 c. sugar, divided
1 egg
3/4 c. milk
1/2 c. butter, melted

Preheat oven to 350. In a large bowl, combine flour, baking powder, salt, nutmeg and 1/4 tsp cinnamon. In a separate bowl, combine oil, 3/4 c. sugar, egg and milk. Add oil mixture to dry ingredients and mix well. Spoon batter into preparted muffin cups or pan. Bake in oven for 20-25min. Meanwhile, in small bowl, combine remaining 3/4 sugar and 1 tsp cinnamon. Remove muffins from oven and let cool. Dip the tops into the melted butter and then into sugar mixture. Let cool.

I just baked em, ate em, and LOVED em !! :) THANKS.
I substituted applesauce for the oil, and used 1/2 whole wheat flour and added flaxmeal so they would be a tad healthy.
