Diet cake!!!

Instead of putting oil, eggs, water, etc. in your storebought cake mix, use one 12-oz. can of diet soda!!!
Use dark sodas (Coke, Pepsi, Dr. Pepper) for chocolate cakes and light (Mt. Dew, Sprite, 7-up) for white or yellow cakes.

I made one today and used a sugar-free cake mix and a diet Pepsi. It's 120 calories per 1/6th of the cake!
Delicious!!

Is the can of diet soda all that you put in the cake mix ?

Does it raise as a normal cake and then what do you use for topping? fruit? cool whip? flavored sauces???? Sounds like something to take to a quilt retreat

One can of soda is the only ingredient! Sounds wacky, right? It is incredibly delicious and moist! At about 120 calories for 1/6th of the cake - eat!

I like to use "CoolWhip Free" because it's fat-free; but I've used sugar-free frosting from a can. I have dusted it with powered sugar. Anything will work. It might raise slightly less than a regular cake now that I think about. Enjoy!

I use diet/fat free puddings for toppings...they work great!

If you use sugar free pudding...use skim milk...and do not use as much milk..it will make the frosting thicker and tastier or you can also add knox gelatin (unflavored) to use less pudding to thicken the pudding up.
