OK, I took this to a family get together this weekend and it went over very well. It made a generous bowl. I was glad to have a healthy and tasty option. I used low-fat ranch dressing. I'll make this again when I have to take something to a gathering...this will be good for Super Bowl party.

That sounds yummy. Dumb question, is shoepeg corn the can of white corn?

Yes, it is sweet white corn. I never bought it before this recipe. Green Giant had it in a can, and also another white corn it said was very sweet. I googled shoepeg corn to see what it was, and some sites said you could use yellow corn in any recipe as is or add a teaspoon of sugar if you wanted to.

Shoepeg corn actually says "shoepeg corn" on the can. I found it at Wal-Mart, but there was only one brand that had it. I'm thinking it was Green Giant maybe? Shoepeg corn is a white corn, but the kernels are a bit smaller and tenderer than other types of corn you buy. I would think any corn would work though. :c)

Donna is correct, shoepeg is on the Green Giant can, but any corn should work. Oh, the can is smaller than the regular 14/15 oz can, but should be located with the rest of the canned corn selections.
