Favorite Camping Recipes
 
Was reading the rving posts...just wondering what every ones favorite camping recipes are. I'm always looking for something new and easy ! My all time favorite is foil dinners.

For each foil dinner you start with 2 sheets ( about a 12 to 18 inch) of heavy duty foil.

Make a quarter lb.ground chuck patty and put in center. Season as you wish with salt , pepper,etc.

Add cut up potatoes(I don't even peal them) , chopped carrots(you can use the packaged baby ones) and a quartered onion.

Double fold sides and ends together one piece of foil at a time.

Cook , meat side down first, on a grate 20 min. on each side.

BE VERY CAREFUL WHEN OPENING . VERY HOT!!!

We add ketchup to ours. YUMMY!!

My husband likes Hobo stew - crumbled burger cooked in a skillet and a can of Campbell's vegetable soup over it - add a little water for more gravy. Other soups work as well, like cheddar cheese soup over the burger and served over toast - like a cheeseburger.

You can just chicken on place of the beef. Just make the same way

We do a lot of dutch oven/cast iron cooking. One of our favourites is Mountain Man Breakfast. Cook some cut up bacon and/or breakfast sausage in dutch oven or cast iron frying pan. Add diced onions, garlic, mushrooms & peppers (as much or as little as you like or in our case the pan will hold, we also use diced precooked potatoes if we have some left from a previous meal). Sauté until tender. Prepare scrambled egg mixture of eggs, milk, salt and pepper. Pour over meat and vegetables. Cover pan and cook until eggs almost completely set. Top with shredded cheese and cook until cheese melts and eggs set. This really is not a quick recipe but it is delicious and when we camp cooking is an event :-). We start planning the our next meal before the dishes are done from the previous one ;-)

One of our favorites is shrimp and muscles. Cook cut up or whole (if using new) potatoes in skillet with water until almost done. Drain off most water and Add onion quarters & corn on the cob and cook until tender. Cook off or drain off rest of water, add one 12oz. beer and shrimp and muscles. Cook just until shrimp is done (approx 3 min). Serve with bread, cocktail sauce, melted butter and beer or favorite beverage. Messy but tasty and easy clean up.

my-ty, the KOA site is fabulous, thank you for giving us the link. My siblings meet every month, during the summer we go to a park for pot-luck. Found a KOA apple crisp that can be prepared at home and 'bake' in the grill after we do our meats. I have my own canned blueberry filling and will use that.

These bring back memories, I'm 69 yrs old..and when I was 12 yrs. was able to go to a summer camp..we made these foil pkgs and put them in coals of campfire..only hamburger, potatoes and onion..but they melted in our mouths, cant remember what happened yesterday, but still remember the fun we had making our supper over the campfire...Will have to do this for my Grandgirls the next time we go to the beach...want to make memories foro them to last a lifetime.
