This is a favorite of anyone that tries it...
Mexican Casserole 1 large bag of white corn tortilla chips 1# of hamburger meat, I use ground chuck.. 1 can of enchilado sauce, hot or med.. 1 jar of taco sauce..mild -- 1 can of chicken mushroom soup 1 onion chopped 1 bag of shredded mild cheddar or cheese or shredded taco blend cheese Brown hamburger meat in large skillet Add 1 can of water to soup and whisk together Pour soup, taco sauce and enchilada sauce into the hamburger meat.. I usually rinse out the taco and enchilada containers with a little water and add to the sauce, Stir till comes to a boil Spray a 9 X 13 pan with Pam. Put 1/2 of bag of the chips in the pan and mash lightly with your hand.. Pour mixture over chips evenly Sprinkle chopped onions over that Finish with grated cheese over top Put in oven at 350 for about 30 minutes or until cheese is nice and brown and bubbly. Let rest about 10 minutes then serve with left over chips... Delicious...Serve with Guacamole.. or just avacado as garnish... Enjoy |

My version of Mexican Casserole.
1 -16oz. bag tortillas chips, gently crushed in 9x13 pan. next comes 1# gr. beef and 1 med. chopped onion, cooked. 1 can chili hot beans, 1 can cream mushroom soup, layered over beans, followed by 1 can Rotel( Mexican style tomatos, then 1# shredded cheese( either cheddar or Mexican style Bake at 350 for at least 45 min. Don't burn the cheese, but you do want that good and hot. We serve it over chopped lettuce, top with sour cream. |
