    Just made these today...

    In a bowl put aside the following
    4 cups flour
    3 tsp baking powder
    2 tsp cinnamon ( I use a generous tsp)
    1 tsp salt (I use about a half)
    2 tsp vanilla
    2tsp milk

    In another bowl mix the following
    2 Eggs
    2 cups pumpkin (a 15oz can)
    1 cup oil
    2 cups sugar
    after mixed slowly add the ingredients from the first bowl. When mixed well, add chocolate chips or cinnamon chips or as I did today, some of each. Stir well. Drop by spoon unto a greased cookie sheet.

    I get 5-7 dozen cookies, depending on the size.

    Ok I am going to try to tweek this and make it gluten free, sounds so good.

    oops, sorry. 350 and bake for 10-12 minutes
