    Last night grandson and I picked the first of the fresh cumumbers - now what can I do with them. We like them fresh cut in salads and I DON'T do pickles. Don't have the time to can them so it's either eat them or give them away. I would really like to hear some ideas on how to fix them without cooking (has anyone ever cooked them?) and/or canning.

    Slice them and onions, soak in vinegar. We eat them as is or add to salads. I sometimes add Italian seasoning to them too.
    My grands like it when I add frozen corn and green beans to this...they can eat a bowl of it for lunch.

    I have a sort of recipe (not written down) from my grandma who used to call it "fresh pickles". You make it in the afternoon and can serve it as a salad or pickles with dinner.

    Slice a cuke really really thin. Also slice thin 1/4 of an onion per cuke) If you have a slicer, this helps. put in a bowl and salt heavily (don't worry). Leave for a hour or so. The salt pulls the water out of the cukes. Drain, rinse and drain again.

    Put a tablespoon or so of red wine vinegar on them, stir them up and put in the fridge. It keep for a day or so, and the cukes stay fresh tasting.

    I love cuke sandwiches. Mayo or Miracle Whip, salt and pepper and sliced cukes. Yum, yum!!

    Instead of salt-soaking in a bowl, put the salted cucumbers (and the onions, too) in a colander or large strainer. Weight down with a gallon-size zip-lock bag fulled with water. Let stand 1-3 hours. All the excess water will drip through the strainer and you won't have to squeeze them dry.

    You said you don't do pickles, neither did I untl my aunt gave me her recipe. You are finished in only a few hours.
    Really crisp good pickles. I will be glad so share recipe
    with anyone.
    My family like tomatos, cucumbers and bell pepper all chopped together stir in a little mayonise, season with sprinkle of Mrs Dash let set a few minutes or if time permitts longer. Good side dish.

    We like what my mom calls "indian relish". (Not sure why it is called that!)

    chop up cukes, tomatoes, onions, green peppers. Add vinegar, a tich of oil (opt), salt, pepper, and celery seed. Great on a hot day!

    My family takes sliced cucumbers (peeled), onions, and beets, and puts them all in one container with vinegar. Yummy! Also, I have a recipe for microwave bread and butter pickles, as well as for the sour pickles if you want it. The whole process takes about 20 minutes to prepare and then you stick them in the fridge overnight. They are the BEST!!

    Slice cukes and onion, (I like the little green onions with this one) add salt and pepper, coat with sour cream...
