    Default Rhubarb Cake

    I made my first Rhubarb cake yesterday and I thought I'd post my recipe.
    RHUBARB CAKE

    2 cups all purpose flour 1/2 cup margarine (Becel)
    1 tsp. baking powder 2 eggs
    1/2 tsp. baking soda 1 tsp. vanilla
    1 1/2 cups not-packed brown sugar 1 cup milk
    1/4 tsp salt 2 1/2 cup rhubarb cut into 1/2 inch pieces


    Mix 1/4 cup white sugar and 1 tsp. cinnamon for cake top and set aside.


    Mix flour, salt, baking powder/soda and set aside. Cream brn. sugar and Becel until fluffy. Beat in eggs, vanilla and milk. Combine the dry ingedients to the wet ingedients and when batter is smooth, mix in the rhubarb. Pour into a greased 9 X 13 cake pan. Sprinkle the top with the sugar/cinnamon mixture and put into 325º to 350º oven. Bake for 50 to 60 minutes or until wooden toothpick inserted in the middle comes out clean. Cool, slice and enjoy.

    Delicious!! ... and almost the same as my Rhubarb Cake recipe too.

    Your rhubarb is way ahead of mine ... I'm jealous!
    And can't wait til I have some far enough for a first picking.

    This sounds great. I love rhubarb; growing up we'd just go into the garden and break it off and sprinkle it with salt and eat it. I brought some new ones last year while in WV, I forget the name but it's supposed to be sweeter than the normal. We have a hard time getting it down here but when I bring it down it grows for several yrs. I was so glad to see it coming back this yr.

    Will have to try this. A week or so ago one of our customers brought us cookies. I loved them. She told us the next day that she used rhubarb. They were so moist.

    Now that's a new one ... any chance you can ask her for the recipe ... and then share it with us?

    I will certainly try that but will have to wait a week or two for rhubarb. Sounds great.

    Thanks so much. I printed it off and will make it this week. I have a good bunch of rhubarb already!

    Yum... it is almost bed time and now I am hungry....Have not baked a Rhubarb Cake in years...this is now on my To Do List..
