    Default Rhubarb Cake

    This cake is really good

    2 cups white sugar
    1 egg
    1 tsp. vanilla
    1 tsp soda
    1/2 cup butter
    1 cup milk(2 tbsp. vinegar or lemon juice
    2 cups flour
    2 cups fresh rhubarb

    Beat first 5 ingredients till creamy
    Add flour, add rhubarb

    Pour into 9 x 12 pan
    Mix 1/2 cup sugar & tsp cinnamon. Sprinkle on top

    Bake 350 oven till done, test with toothpick

    Similar to my recipe and I have made 2 rhubarb cakes already this spring and will be making another for this weekend. Soon my rhubarb will be going to seed.

    Thanks, DH loves rhubarb and I paid a high price for enough to make him a cake tomorrow. It is not cheep here in FL. My mother used to grow it when we lived in Buffalo, NY
