Default Too hot to cook? Try this for dinner

GERI’S SANTA FE- SOUTHWEST CHICKEN SALAD:




1 Can black beans, drained and rinsed

1 Can whole kernel corn, drained

1 Red bell pepper, diced

8 cups greens (any of your choice. I use romaine and green leaf)

1 small diced red onion

3/4 cup finely chopped fresh cilantro (more or less to your taste)

½ cup fresh salsa rojo (drain off any excess juice)

1 cup Ranch prepared salad dressing

1 cup shredded Mexican blend cheese (optional)

1 Avocado, chopped into small pieces

2 chicken breasts, sautéed in 1 tbsp oil and seasoned with taco seasoning mix**

1 Pkg. Tortilla STRIPS not chips


Cook chicken breasts, cool and slice into small strips. Place greens, black beans, corn, red pepper, onion, and cilantro into salad bowl and mix well. Combine salsa and ranch dressing. Place chicken, avocado pieces on greens, pour dressing over all and top with tortilla strips and cheese.

**Note chicken can be grilled if preferred.

I am going grocery shopping today for this, sounds like something I will really like. In fact I am going to make it for our Wednesday night church fellowship and Bible study. Thanks for the recipe.

Today is a 3 digit day, thanks for sharing. I think I will buy an already roasted chicken, then I really don't have to cook. This looks very fun and refreshing.

Yes it is too hot to cook & I just made that same salad last week! Sometimes I substitute barbeque sauce for the salsa, that's good too. Delicious!

Thanks for the great idea. We get pretty hot here in Georgia in the summer time. I find that Cosco has the best roasted chicken, so when I want something quick, we buy one and get about six meals out of it. Hot meal with vegetables, sandwiches, salad with chicken strips and with the left overs, I grind to blend with hard boiled eggs and seasonings to top on tomatio, lettuce, avacado, cucumber, etc.. Then, I cook down the bones with the meat that is left on left and freeze for stock. You might guess, I came from the depression days. My Mom knew how to feed a family of six when money was tight. Thanks again. I am going to make this for dinner this week.

Sounds like my family - 8 kids, mom and pastor dad. Mom knew how to stretch a dollar and she taught each of us girls how to do the same. Since I am single, I buy a rotisserie chicken from Sam's (for only $5.99) and my poodle Rennie and I enjoy it hot with a baked potato and veggies the first day. I then remove most of the meat from the bones (leaving some on the bones to make chicken and rice, or chicken and noodles soup), cut the rest into chunks to make both hot and cold chicken salad and/or chicken spaghetti. This is a great budget stretcher-we get at least 3 or 4 meals from that one chicken.freezing the meals that we don't eat the first day. Thus, when we don't feel like cooking, we just pull out the meal, stick it in the oven or microwave (whichever is appropriate) and have a meal in no time.
