Default Spicy Apple Caramel Bread

4.5 oz. Werthers Caramels
3/4 C. Butter softened, divided
1 medium apple
1 T. vanilla
3 Lg. eggs
2 1/4 C. flour
1 t. baking soda
1 t. cinnamon
1 t. pumpkin pie spice
Preheat oven to 325, grease and flour 1 loaf pan

Microwave caramels and 2 T. butter on High, 1 1/2 minutes, or till melted, stir after 1 minute.
Peel, core, quarter and slice apple.. Stir apple slices into melted caramel, set aside.
Beat remaining 1/2 C. butter and vanilla with electric mixer till fluffy. Add eggs, one at a time,beating well after each.
In another bowl , stir together flour, baking soda and spices. Add flour mixture to the butter mixture and blend
just till combined. Stir in melted caramel and apples.Pour into prepared pan.
Bake 1 hour 15 min to 1 and 1/2 hours, or till toothpick comes out clean. Cool on wire rack 15 minutes
before removing from pan. cool completely before slicing.

Sounds fantastic. I have a jar or two of Caramel for ice cream and I think that will work too. Thanks for recipe.

This sounds delicious! Too bad one of our quilt group is celiac now, and yes I know I can probably sub out the flour for almond flour...but it's kind of pricey..... Enjoy!
