This is a recipe my friend shared with me and it is so goo and so easy, I thought I would share it with you. I'm making it for dinner as I type. Yum Yum!!!

TACO SOUP


1/2 to 1 lb ground beef (I usually use ground elk)
1/2 cup chopped onion
1 1/2 cup water
16 oz can stewed tomatoes
1 can kidney beans, undrained
8 oz can tomato sauce
1/2 to 1 cup frozen corn
1 pkg taco seasoning

Brown and drain the ground beef and onion. Add the remaining ingredients and simmer, covered, for 15 minutes.

We usually top it off in our bowls with sour cream, grated cheese, crushed tortilla chips (or in my friends case, her husband like his with corn bread) and green onion. She even puts olives in her soup. (I don't like olives so they got ixnayed real fast from my recipe)

Now doesn't that sound easy? I usually double everything and make a big pot of it. It doesn't last long around here. Enjoy!!! :D :D :D :D :D

This is a favorite at my house! My recipe calls for a packet of ranch dressing mix also.

This is similar to the Weight Watcher Taco Soup except we don't get to add the cheese, sour cream, crushed chips, cornbread!!!! LOL!!!

We use cubed chicken breast instead of ground beef. I toss in a can of diced tomatoes and a can of seasoned chili beans. Garnish with sour cream, cilantro and tortilla chips. Mmmmm!

Hmm, I still have leftover turkey . . . I think I will make some taco turkey soup tonight.

This sounds so good you can even crisp up tortillas in a pan after you cut them into little strips and float them on top.

I LOVE this soup... but you gotta have the tortilla chips. They really make it...
