    we always have creamed turkey over biscuits on friday after turkey day..then turkey noodle soup for the weekend. i dont make as much dressing and potatoes any more. hardly any left of them. walmart had their turkeys for .50 a lb. ducks 2.28 got 1 of each yummy !!

    My all-time favorite way to use leftover turkey is a recipe my mom found and started using many years ago---Hot Turkey Salad. And since my daughter hosted our family Thanksgiving dinner this year, I will be cooking a turkey sometime this week just so we can enjoy leftover turkey!
    Ingredients:
    2 cups cubed cooked turkey
    2 cups chopped celery
    2 teaspoons grated onion
    1/2 cup sliced almonds
    1/2 teaspoon salt
    1 cup mayonnaise
    2 tablespoons fresh lemon juice
    1/2 cup Cheddar cheese, grated
    1 cup club cracker crumbs
    1 tablespoon butter or margarine
    Directions:
    1.Preheat oven to 425 degrees F (230 degrees C). Grease a 9x13 inch baking dish.
    2.Mix the turkey, celery, onion, almonds, and salt together in a mixing bowl. Stir in the mayonnaise and lemon juice until evenly blended. Spoon into the prepared baking dish. Sprinkle with Cheddar cheese, then cracker crumbs, and top with butter .
    3.Bake in preheated oven until cheese melts, 25 - 30 minutes.

    One thing besides a turkey sandwich. I take the gravy,dressing and cut up turkey and mix it all together in a pan, make toast cut up in little chunks then I serve it up with the turkey and gravy mixture and a big chunk of cranberries and we are all set. hmmm.......

    turkey enchiladas, soup, sandwiches (hot with gravy & mashed potatoes), pot pies and then hope it is gone.

    We have leftovers the next day and if there is turkey left over I put it in a freezer container and freeze it. I wait a couple of weeks or a month and make turkey soup. By that time I'm looking forward to it and it really doesn't seem like leftovers.

    I always make 'Turkey Enchaladas' (SP)? So easy! Very good!

    I soaked navy beans in water overnight. I add 1 tbsp salt to every pound of beans so they'll get tender. then rinse, pop them in the crockpot, add 1 ham bone, 2 carrots (large pieces), 3 stalks celery, 1 onion chopped and salt and pepper. Let cook all day and YUM!!!! THAT's my favorite leftover!
