My all-time favorite way to use leftover turkey is a recipe my mom found and started using many years ago---Hot Turkey Salad. And since my daughter hosted our family Thanksgiving dinner this year, I will be cooking a turkey sometime this week just so we can enjoy leftover turkey!
Ingredients:
2 cups cubed cooked turkey
2 cups chopped celery
2 teaspoons grated onion
1/2 cup sliced almonds
1/2 teaspoon salt
1 cup mayonnaise
2 tablespoons fresh lemon juice
1/2 cup Cheddar cheese, grated
1 cup club cracker crumbs
1 tablespoon butter or margarine
Directions:
1.Preheat oven to 425 degrees F (230 degrees C). Grease a 9x13 inch baking dish.
2.Mix the turkey, celery, onion, almonds, and salt together in a mixing bowl. Stir in the mayonnaise and lemon juice until evenly blended. Spoon into the prepared baking dish. Sprinkle with Cheddar cheese, then cracker crumbs, and top with butter .
3.Bake in preheated oven until cheese melts, 25 - 30 minutes.
