This watermelon based dressing is great during the summer months. It is very light.
4 C. fresh watermelon, chopped and drained
1/4 C. red onion, diced small
2 Tbs. honey
1/4 C. balsamic vinegar
3/4 C. light olive oil
2 Tbs. fresh basil chopped
1 Tbs. fresh parsley, chopped
Salt and pepper to taste
Combine watermelon, red onion, vinegar, olive oil, basil, and parsley in a
blender. Pulse on and off about 30 seconds until combined. Add salt and pepper to taste. Serve over mixed salad greens or fresh spinach and strawberries.
