I normally dice up the stray bell peppers and some onion and toss into bags in the freezer for soups/stews, etc, , but tonight we harvested over 9 POUNDS of Tam Jalapenos, sweet banana peppers, Thai hot peppers(little tiny ones) and bell peppers...

    OY...

can I chop and freeze these peppers as well you think??
I just don't have time to can them all this week!

    Thanks!

I freeze my green peppers every year. I just cut them in half and clean them out, place them on a cookie sheet and freeze. Once they are frozen I put them in ziploc bags. I have also diced them and froze them the same way. It's great to just grab half a pepper and chop it up and use it all winter long.

I know..I love FRESH bells all year long...but have never done this with the HOT peppers...thinking it should be the same, but not sure!

These are not HOT really, but more flavorful...and just as juicy...they are great grilled with cream cheese...but also tossed into the bean pot! would love some this winter!

I freeze bell peppers all the time. When I find that I can't use it all before they go bad, I dice them, throw it in a strainer to drain a little bit and then throw it in a ziploc bag. Freeze. When I need to use it for spaghetti sauce, I just whack the bag on the counter and loosen some of it, and then dump what I need out in a bowl. Sometimes I let it defrost in the bowl or dump it directly into the sauce frozen. Not a big deal. I also dice green onions and put it in the ziploc bags, too. I don't bother laying it out on a cookie sheet first in either pepper or onions. More trouble for me. LOL

I chop my bells and onions and mix together, then put into ice cube trays to freeze, then to a zip lock. Nice little "bundles" to throw into a stew, sauce or omlet.

I also make up onion, celery and red bells together.
