    While grating up tubs of zukes the other day to make relishes, I thought, about what about using this to make SLAW? Well, I goggled it and sure enough..there are tons of zucchini slaw recipes. None of them really appeal to me, so I thought I would come to you instead.

    I can not do cabbage, so it will be zucchini, red peppers, carrots and onion only! My main concern is the dressing! What do you use?

    What about using the over the counter slaw dressing???
    I'm going to try this.....

    Oh!!! another thing for zucchini is Mock Crab Cakes
    recipes is in Allrecipes.com.....We have fixed them twice this week!!

    I am diabetic so trying to avoid the really sweet slaw dressings.
    I did find a dressing that has avacado, cilantro and yogurt in it..it is green and sound yummy!

    will look up that mock crab cake recipe too...sooo much zucchini here at my sisters to turn into something other than compost!

    Those mock crab cakes are deeeeeeeeelish!

    Don't use salt to sweat your shreds, though. Shred and squeeze them out in a cheesecloth or clean towel to get rid of excess moisture.

    I'm going to try the mock crab cakes. They would be great for lunch one day with a salad. i try to avoid lunch meat so sometimes I run out of lunch ideas.

    I also have tons of zucchini. I never thought of making slaw out of it. My favorite cole slaw is to buy the low fat ready made dressing and dilute it by about half with dill pickle juice. I add a little onion and carrots.

    I also make a dip for the Mock crab Cakes
    Light Mayo and hot sauce....that's it!!!!
    DH loves it....Make it as hot as you like.......
