Hi Lynnie in Australia! I'm Lynn in VT - USA, and I also use the kitchen counter. We renovated our kitchen 10 years ago and I designed in a double-width peninsula counter at 36" high that just fits large cutting mat. Son-in-law builder wanted to put a post in the middle of it to support upper cabinets, but I insisted it had to be entirely open. He used extra strong install to hold cupboards to the wall and soffit instead. I love my setup, though have to do a cleanup when I go to use it. Sometimes when laying out the "sandwich" I go to local quilt shop where they let me use their big tables. So nice to have shop just a mile away that fills all my quilty needs!
