I was in LV in May and went to Quiltique, while the shop was very nice - well set up and the lighting was great: I could not find one thing to buy which is unusual for me. I found the prices very high, even when 30% off UI could not bring myself to buy anything.
When I have travelled with my DH I take my English paper piecing hexagons and what all the tv I never have time to watch at home, including movies.
Go down to the pool at your hotel in the morning as it is going to be hotter than you know what there.
Enjoy your time away from home!

Can't help you with fabric shops, but I just wanted to tell you to have a great time. I enjoy Vegas every time I go! I love the shows!

Definitely Quiltopolis, I can spend all day in that shop, and they are so nice!

you have to go to Quiltique in Henderson, which is east of the strip but easy to get too you will love it, you can google quilts shops in las vegas and come up with some I've been to 4 in the area all over vegas and loved them all.

Don't gamble too much so you have enough for fabric. LOL

We stayed at Lake Mead this April. Fiddlesticks in Boulder City is a small, friendly shop that I just fell in love with. I made a couple of stops before we had to move on. It is top of the line in my book. I was fortunate to stop by Quiltique in Henderson when they were sponsoring a sidewalk/Craft sale with local quilters selling their stash. Fantastic. I recommend both shops.

Paris is right on the strip. No quilt shops within walking distance, but I agree, you won't have much time for browsing, too much to see and do on the strip. We were there last August and just a warning, it was REALLY hot!!
