    Default Lemon Squares Pastery ?

    Looking for the pastery for lemon squares,
    I have the lemon filling already. does anyone have the recipe for the pastery (squares) ? I have looked everywhere.

    A friend of mine makes the best lemon squares. Even though you have the filling, I'm going to share the entire recipe for anyone that's interested. Have you considered using a simple phyllo dough? Anyhow, here goes:

    2 cups flour
    1/2 cup sifted confectionery sugar
    1 cup butter or margarine
    4 beaten eggs
    2 cups granulated sugar
    1/2 cup of fresh lemon juice (about 1 lemon)
    1/4 cup flour
    1/4 tsp. baking powder

    Sift together the 2 cups flour with the confectioners sugar. Cut butter or margarine in until mixture comes together and is crumbly. Press into a pan (9 x 12?) sprayed with Pam. Bake at 350 oven for 20-25 minutes until light brown.

    Beat together eggs, granulated sugar and lemon juice. Sift together 1/4 cup flour and baking powder. Stir into the egg mixture. Pour over the baked crust.

    Bake 350 for 25 minutes. Sprinkle with confectioners sugar. Cool. Cut into bars.

    That's the same recipe we use. Grandma and mom passed it down to me.

    Here's a recipe I just learned about. Easy and fast for potlucks.... called 2 ingred. lemon bars.
    1 box angel food cake
    1 can lemon pie filling
    mix together and put in pam sprayed 9x13 pan and bake 350 degrees for 20 min. sprinkle with powder sugar if you want to. I found that made night before and put in frig it tastes better.

    Here is our favorite, I am always asked to make these.
    Lemon Squares

    Crust:
    2 cups flour
    1 cup butter
    ½ cup powdered sugar

    Cut with pastry blender. Pack firmly into 9x13 pan, greased.
    Bake 20 minutes at 350°.

    Filling:
    4 eggs
    2 cups sugar
    dash of salt
    juice of 2 lemons
    4 Tbsp. flour
    1 tsp. baking powder

    Beat eggs and add sugar, salt and lemon juice. Mix flour with
    baking powder and fold into egg mixture. Pour over crust.
    Bake 25 minutes at 350°. Dust with powdered sugar when cool.

    Looks similar to one I use - lemon squares are delicious at any time.
